Pierre Balthazar says goodbye to good friend Luigi Taglienti (*) of restaurant Trussardi alla Scala (*) in Milan, and welcomes Macarena de Castro of restaurant Jardin (*) in Alcúdia, Spain. She creates a Spanish & personal interpretation of the 9 seasonal products for The Restaurant menu together with Pierre Balthazar. Also known as ‘the Mallorcan’, Maca de Castro, chef-owner of the Jardín (*), since she was born in 1981 and from 18 years has been working at the stoves. She found her vocation by attending conferences, traveling and performing stages. From her beginnings as a sous chef, she has combined work and training, both at the Balearic Escola d’Hoteleria as with renowned chefs, including Hilario Arbelaitz, Andoni L. Aduriz, Ferran Adrià and Julian Serrano. She gave a dissertation at the Madrid Fusion and has a Michelin star since the 2012 edition.
The Restaurant menu is created by the personal interpretations of the 9 seasonal ingredients by Macarena de Castro Jardin (*) in Alcúdia, Spain, Michaël Fulci Les Terraillers (*) in Biot-Cannes, and Oth Sombath of the Thai restaurant Aux Trois Nagas in Paris 16ème.
