The Capital region of Brussels and the city of Brussels invite you, for the fourth consecutive year, to the Brussels Restaurants Festival. The wine region of Bordeaux will be presenting, once again this year, its revamped Brussels version of the ‘Bordeaux Fête le Vin’ (Bordeaux Celebrates Wine).

On the 17th and 18th of June, the two chefs and friends will combine their expertise at The Restaurant by Pierre Balthazar. During these two days, Oth Sombath, chef at the Aux Trois Nagas restaurant in Paris, will try his hand at a “diner à 4 mains” alongside Pierre Balthazar.

Discover their collaboration during a business lunch or discovery dinner in the presence of the two chefs. Prepare for a total immersion in Thai cuisine; the menu offers creations with spicy accents and dishes with unusual combinations, merging the tradition of Asian cuisine with culinary innovation.

Just like previous collaborations with the other ambassador chefs Macarena de Castro – Restaurant Jardin * in Spain and Michael Fulci – Les Terraillers * Biot/Cannes, this looks to be a promising third edition of the “diner à 4 mains” in the presence of guest chef Oth Sombath!

A warm wind has blown through “The Restaurant by Pierre Balthazar” in January, introducing the new Spanish collaboration that will complete the multicultural concept that characterizes the menu. And so, Pierre Balthazar welcomed chef Macarena de Castro of the restaurant Jardin* in Alcùdia, for a total immersion into the accents of the South. The connoisseurs among us were able to taste the delicious gastronomical dishes created by the two chefs.

After the excitement surrounding the first « Diner à 4 mains » of the year – Pierre Balthazar now offers a new take on his concept, which he has fine tuned and where he establishes his Belgian touch.

This March, The Restaurant by Pierre Balthazar will offer a 3 and 4 course menu exclusively dedicated to his cuisine.

Over the course of 3 weeks, and throughout 3 special menus, Pierre Balthazar invites us to discover his culinary « label »: the result of a gastronomical journey filled with boldness and curiosity, that carries with it a sense of humility, generosity and the uniqueness of an atypical chef.

The concept of “The Restaurant by Pierre Balthazar”, where guests are invited on a gastronomical journey and can enjoy dishes based on 9 seasonal products prepared by Pierre Balthazar with inspiration from his international friends, will be put on hold. However, these 3 weeks will be very promising on a culinary level and will be in line with the high-quality approach that typifies The Restaurant by Pierre Balthazar!

The cuisine of Pierre Balthazar – what can we expect?

The secret to the cuisine of Pierre Balthazar is revealed through the very characteristic way he cooks: by always aiming to please.

His cuisine has a meaning and is based on listening to his guests. Veal sweetbread, sole with shellfish… All refined tastes that will take you back to your childhood, your memories, encounters, and travels.

Carefully preserving the cultural coherence in all his creations, it is thanks to his journey and his acquaintances with foreign chefs that he breathes new life into this respectful approach with a large sense of diplomacy.

One can recognize his dishes in the blink of an eye; a very clean presentation, longitudinally dressed, without any frills or aesthetic details which aren’t meant to be.

The star of the menu is the seasonal harvest. Pierre does not transform it, but he strengthens the flavor and enjoys playing the role of a catalyst, while at the same time respectfully preserving the origins and history of these great ingredients. For him, there is no ostentatious fusion, only passion!

Pierre Balthazar says goodbye to good friend Luigi Taglienti (*) of restaurant Trussardi alla Scala (*) in Milan, and welcomes Macarena de Castro of restaurant Jardin (*) in Alcúdia, Spain. She creates a Spanish & personal interpretation of the 9 seasonal products for The Restaurant menu together with Pierre Balthazar. Come and discover her interpretation in The Restaurant as from January 2nd.

Also known as ‘the Mallorcan’, Maca de Castro, chef-owner of the Jardín (*), since she was born in 1981 and from 18 years has been working at the stoves. She found her vocation by attending conferences, traveling and performing stages. From her beginnings as a sous chef, she has combined work and training, both at the Balearic Escola d’Hoteleria as with renowned chefs, including Hilario Arbelaitz, Andoni L. Aduriz, Ferran Adrià and Julian Serrano. She gave a dissertation at the Madrid Fusion and has a Michelin star since the 2012 edition.

The Restaurant menu is created by the personal interpretations of the 9 seasonal ingredients by Macarena de Castro Jardin (*) in Alcúdia, Spain, Michaël Fulci Les Terraillers (*) in Biot-Cannes, and Oth Sombath of the Thai restaurant Aux Trois Nagas in Paris 16ème.
