EAT Brussels is a unique occasion to experience the creations of the top restaurants and food artisans in Brussels. Guests will be able to discover tasters from the 4-corners of the culinary world, and this year will be able to marry them with glasses of Bordeaux, as they are the ‘wine’ guests of honour at this year’s event.

The Capital region of Brussels and the city of Brussels invite you, for the fourth consecutive year, to the Brussels Restaurants Festival. The wine region of Bordeaux will be presenting, once again this year, its revamped Brussels version of the ‘Bordeaux Fête le Vin’ (Bordeaux Celebrates Wine).
The menu will offer an explosion of tasty discoveries coming from the four corners of the world made available to you at the heart of the Festival eat! BRUSSELS, drink! BORDEAUX, representing the symbol of the culinary variety which we have available here within the city of Brussels. Restaurants representing many countries from around the globe, which have been established here in our capital, will double their efforts in creativity in order to surprise and please everyone interested, even the gourmands among us.
In order to give your discovery another dimension we have the ” Wine Pass “, this will give you the possibility to step into the shoes of a sommelier as well as a chance to get to know the Bordeaux wine world.
For Brussels, cosmopolitan as well international City/Region, this festival represents a great opportunity to get to know, as well as give proper respect to, the regions, the provinces and cities we are linked with by way of cooperative agreements. This year, in collaboration with the Ministry of Exterior Relations and the Department of Exterior Relations of that Ministry, we will strengthen our bilateral partnerships through their specific cuisines.
While taking a break in between tasting sessions we recommend some recreational workshops where you can satisfy your culinary and wine related curiosity. Culinary artisans will be on hand and they will let you in on their talents and know-how.

The gourmet promenade will be held at the heart of the Parc de Bruxelles (Warandepark) for the first time.
Pierre Balthazar says goodbye to good friend Luigi Taglienti (*) of restaurant Trussardi alla Scala (*) in Milan, and welcomes Macarena de Castro of restaurant Jardin (*) in Alcúdia, Spain. She creates a Spanish & personal interpretation of the 9 seasonal products for The Restaurant menu together with Pierre Balthazar. Come and discover her interpretation in The Restaurant as from January 2nd.
Also known as ‘the Mallorcan’, Maca de Castro, chef-owner of the Jardín (*), since she was born in 1981 and from 18 years has been working at the stoves. She found her vocation by attending conferences, traveling and performing stages. From her beginnings as a sous chef, she has combined work and training, both at the Balearic Escola d’Hoteleria as with renowned chefs, including Hilario Arbelaitz, Andoni L. Aduriz, Ferran Adrià and Julian Serrano. She gave a dissertation at the Madrid Fusion and has a Michelin star since the 2012 edition.
The Hotel has chosen to outsource all food & beverage activities. Pierre Balthazar, from Belgium, will be responsible for both the culinary identity and the operational organisation of the new restaurant, bar and lounge on the ground floor as well as the meeting and events side of The Hotel.
Aldert Schaaphok, Vice President Operations Pandox AB, explains: “The quality and appeal of the food & beverage product are of low quality in most hotels in Brussels, with hardly any exceptions. It is very common in the international hotel business to outsource the restaurant activities. At The Hotel, we have decided to outsource this part to a professional, external party as well. Pierre Balthazar will bring considerable culinary knowledge, experience and creativity to the table”.
The Hotel will still have full responsibility for the commercial and marketing activities.
Pierre Balthazar (43) is no stranger to the complexity of restaurants in the hotel business. He started his culinary career with Yves Mattagne and subsequently, he has worked as Executive Chef at various top hotels in Belgium and Germany. For the last ten years, Pierre Balthazar has worked as Executive Chef of the Council of the European Union, where he was a.o. in charge of the exclusive and prestigious dinners during the state visits and meetings of the European Top.
The Hotel completely renewed in September
The end of the renovations is near: as of September, The Hotel will have a total of 421 renovated rooms, 10 new meeting rooms (of which 8 are located on the top 3 floors with spectacular view of the city) and 2 completely renewed ball rooms and a foyer on the first floor.
The restaurant with open kitchen, as well as the bar and lounge will be located on the ground floor with a magnificent view of the Egmont Park and will also be opened at the start of September. Culinary Director Pierre Balthazar has developed a unique, culinary concept for the restaurant, of which more will be revealed next month.
