Macarena de Castro

The chef of the house

Pierre Balthazar, the chef and current “Culinary Director” of The Restaurant, has been on a bold and eclectic journey and he owes his open-mindedness especially to his 10 multicultural years at the head of Council of Europe’s kitchens.

He can draw from this experience to create a unique concept for The Hotel, by offering a range of the best culinary influences globally, in close collaboration with his international network of chefs, who have also become his friends.

The Restaurant adds Hispanic flavours at the beginning of the year

The Restaurant by Pierre Balthazar is delighted to welcome Macarena de Castro from restaurant Jardin* in Alcùdia (Spain) amongst its chefs and international collaborators.

Pierre Balthazar will welcome the Spanish chef to celebrate this new distinguished collaboration and they will prepare 2 lunches (27 & 28/01) and an exclusive diner (28/01) together at The Restaurant*. Book this gastronomic experience now!

Macarena de Castro

Like her predecessors – Michaël Fulci from Les Terraillers* in Biot, Oth Sombatch from Aux Trois Nagas in Paris and Luigi Taglienti from Il Ristorante Trussardi alla Scala* in Milan (who she replaced) – who all followed Pierre Balthazar’s concept, Macarena de Castro has to use the same 9 basic ingredients and transform these with her expertise and Pierre’s help into an incredibly varied menu!

Macarena de Castro

The sensory journey through Spain and its gastronomic culture cannot be missed, whether it is for a business lunch for those who are in a rush, a 2- or 3-course menu for those who are curious or for a truly Spanish 6-course degustation menu for the Epicureans among us, whether or not accompanied by a matching selection of Spanish wines. Such a beautiful moment of sharing and conviviality is unfortunately only available to a limited number of guests, so do not hesitate and book now*. *By reservation only

Pierre Balthazar becomes The Hotel’s Culinary Director

Pierre Balthazar - Culinary Director at The Hotel

The Hotel has chosen to outsource all food & beverage activities. Pierre Balthazar, from Belgium, will be responsible for both the culinary identity and the operational organisation of the new restaurant, bar and lounge on the ground floor as well as the meeting and events side of The Hotel.

Aldert Schaaphok, Vice President Operations Pandox AB, explains: “The quality and appeal of the food & beverage product are of low quality in most hotels in Brussels, with hardly any exceptions. It is very common in the international hotel business to outsource the restaurant activities. At The Hotel, we have decided to outsource this part to a professional, external party as well. Pierre Balthazar will bring considerable culinary knowledge, experience and creativity to the table”.

The Hotel will still have full responsibility for the commercial and marketing activities.

Pierre Balthazar
Pierre Balthazar (43) is no stranger to the complexity of restaurants in the hotel business. He started his culinary career with Yves Mattagne and subsequently, he has worked as Executive Chef at various top hotels in Belgium and Germany. For the last ten years, Pierre Balthazar has worked as Executive Chef of the Council of the European Union, where he was a.o. in charge of the exclusive and prestigious dinners during the state visits and meetings of the European Top.

The Hotel completely renewed in September
The end of the renovations is near: as of September, The Hotel will have a total of 421 renovated rooms, 10 new meeting rooms (of which 8 are located on the top 3 floors with spectacular view of the city) and 2 completely renewed ball rooms and a foyer on the first floor.

The restaurant with open kitchen, as well as the bar and lounge will be located on the ground floor with a magnificent view of the Egmont Park and will also be opened at the start of September. Culinary Director Pierre Balthazar has developed a unique, culinary concept for the restaurant, of which more will be revealed next month.

New place to be in Brussels for foodies: AUB.SVP

Restaurant AUB.SVP – which means please –  (= Dutch + French abbreviation) opened it’s doors on the 12th of January in the former entrance of Cinéma de la Monnaie.

AUB.SVP serves breakfast and lunch based on the concept “pain-ture“. “Pain” is French for bread, and the entire word “Painture” means painting. Expect a variety of dishes on a plate supported by special bread-combinations (for example with lime, with beer, …) and every plate will tell it’s own story.  A nice dessert is also an option. The menu of this restaurant is limited to 5 options for breakfast, lunch & dessert to make sure to put quality before quantity.

Creative souls behind this concept are:

  • Kenny Bernaerts, creative chef of Yves Mattagne & Master Chef VTM
  • Yves Guns, best artisan baker of Brussels
  • Willy Grieten, Gip-food for artisan & natural touches
  • Bart Lens, Architect

The decor of AUB.SVP isn’t common at all. Architect Bart collected wooden waiters in the Sablon area to tell customers with a wink that they can expect an excellent service. Rustic walls, tables & newspaper clippings refer to the tumultuous history of this building: in the 19th Century a jeweller and a photoshop were located here, and in 1930 it became the entrance for Cinéma de la Monnaie. The eyecatcher wall inscription on the outside, still refers to this period.

We’re looking forward to the 1st reviews!
