A brief history of the best Belgian waffles in Brussels

If you’re planning a gastro short break in Brussels, along with its world-famous Belgium chocolate, fries and craft beers, you’ll need to know where to find the best waffles in Brussels. The first waffles were made by Belgian peasants back in the middle ages. Using a mix of crushed oats and barley, and baked similarly to a flatbread or pancake, they were a staple for most tables.

The popularity of the modern Belgian waffle is attributed to Belgian Walter Cleyman and his waffles at the Seattle Exposition, and Belgian Maurice Vermersch with his waffles at the New York City Fair. However, just to muddy the waters a little on your quest to taste the best waffles in Brussels, you have a choice of two versions.

While both types use similar ingredients, shape and consistency are different, although both retain that crispy exterior and soft, airy inside.


Liege waffles

Originating from the city of Liège, the Liege waffle is oval. The dough is mixed with pearl sugar, and often baked with added fruit or chocolate chips inside and a sweet sugary outside. Designed to be eaten with the fingers, they are naturally sweet and very popular with locals and visitors who want to enjoy a snack while on the go.

Brussels waffles

Although the Liege waffle is a favourite snack in Belgium, it is the square or rectangular Brussel’s waffle you find pre-wrapped in small stores and supermarkets across other European countries.

The Brussel’s waffle is designed more as a sweet, and usually served with a range of toppings such as chopped fruits, sauces and thick cream or ice cream.

Maison Dandoy Tea Rooms
